Heraldry and Coat of Arms — History and background with enlarged images for print or digital display can open up your unit and gets students engaged. Walk step by step with each page to build your own coat of arms. Each page defines and shapes the final art piece. Everything from shape, style, divisions, tincture, fur, etc. is included. Although for each, there are so many more and crests tended to change through the year for each clan or family. This can be combined with additional research for more imagery to use in your own crest. 6 pages of blank crest shapes can get students going or use as practice before jumping to a final. This is an extensive pack of information—I've used with all grades, usually simplifying for younger students. 

 

On a personal note: I've done this project just as a design of a Coat of Arms. I've also done a tooled metal knight holding a shield with the coat of arms. Or you can even do Romanesque vs Gothic drawings of castles and have students include their own Coat of Arms on their architecture.
